Japanese Ham and Sausage and Cream Pan?

The last time I was in Japan was about 6 years ago, and in Hiroshima I had a variation of Cream Stew that utilized ham instead of chicken. I'm curious what is a good ham to use for this application and if it is easily accessible at an average grocery store? I plan on using just a general ham steak, but wanted to double check. Also, I've heard that Japanese breakfast sausage are similar to Vienna sausage, I've not had Vienna sausage before, so again I wonder what the closest product in America I can get to Japanese breakfast sausage are? Finally anyone know how to make Cream Pan (Bread) from scratch, I have a local Japanese grocery I can get Shu Cream from and Melon Pan but they don't have Cream Pan. Any suggestions or recipes are greatly appreciated.
